Fresh fruit or would you prefer canned fruit?
In itself, it doesn't matter whether you use fresh fruits or the pickled ones. However, what you should keep in mind with mandarin compote is that the fruit is wetter. So that the cake doesn't end up soggy, you have to drain it well. In addition, the compote is already sweetened, so you can reduce the amount of sugar in the recipe if it is intended for fresh tangerines.
You have to peel and fillet fresh tangerines. There should be no skin left when you use it in the cake.

- ½ pack of baking powder

- 4 egg whites
- 3 egg yolks

- 100 g canned tangerines, drained
Preparation of the soil
- Mix the flour and baking powder in a bowl and then add the egg, the butter in pieces and the sugar to knead a shortcrust pastry.
- Once a smooth dough has formed, cover the bowl with foil and place in the refrigerator for 30 minutes.The shortcrust pastrymust be cooled down before you continue working with it.
- Preheat the oven to 180 degrees.
- Grease a springform pan, roll out the dough and use it to line the pan. You should also form an edge here.
- Bake the base for 10 minutes, remove it from the oven and let it cool while you prepare the cream.

Prepare the quark cream
- Beat the egg whites in a clean bowl until stiff and chill.
- In another bowl, mix the quark with the vanilla pudding powder.
- Add all other ingredients except the egg whites.
- Once everything is well mixed, carefully fold in the egg whites.

Quark cake with bottomless tangerines

Preparation:
- Preheat the oven to 170 degrees.
- Mix all ingredients except the tangerines.
- As soon as you get a smooth mixture, fold in the fruit.
- Grease a springform pan (or a square one measuring 24 x 24 cm if you like) and sprinkle it with some desiccated coconut.
- Add the quark mixture and bake everything for 60 minutes.
- Do not take the mandarin curd cake without a base out of the oven immediately, but let it rest for 10 minutes with the oven door open.
- While it is still warm, loosen the cake from the edge of the springform pan, but without removing it completely.
- Let the curd cake with tangerines cool in the mold.
