No-bake Christmas cheesecake with a speculaas crust from the fridge

Does speculoos make you as addicted as it does us? Then you are guaranteed to like a cake base made from these cookies! And what if we told you that it's the perfect base for everyone's favorite cheesecake? A Christmas cheesecake with speculoos crust is simply perfect for both Advent and Christmas itself! So, how is it prepared?

Cream cheese and mascarpone combined in a cream and the cinnamon-yummy Christmas cookies as the base - doesn't that just sound incredible? We are sure you can't wait to try the cake. So here is the recipe that will make a Christmas cheesecake with a speculoos crust in no time:

For the floor:

  • 300 g Speculation biscuits
  • 110 g Butter

For the cream:

  • 150 g cream cheese
  • 300 g Mascarpone
  • 300 g whipped cream (30%)
  • 240 g speculoos cream (you can also make it yourself)
  • 1 TL Vanilleextrakt

For the topping:

  • 120 g Spekulatiuscreme
  • 100 g whipped cream (30%)
  • 2 tsp powdered sugar

How to make the cheesecake without baking

  • In a blender, crush the cookies.
  • Melt the butter over low heat and mix it into the cookie crumbs.
  • Save two tablespoons for later and put the rest in a springform pan (20 cm). You can (and should) press it down with a spoon, your fist, or the bottom of a drinking glass.
  • Place the mold in the refrigerator.

For the cream:

  • Mix the cream cheese with the mascarpone, vanilla and the speculoos cream.
  • In another bowl, whip the cream until stiff.
  • Fold into the cheese mixture and stir until well combined.
  • Spread the finished cream on the base and put everything in the cold again, this time overnight.

For the topping, do this:

  • Remove the edge of the springform pan and smooth the cream on the sides with a spatula.
  • Heat the speculoos cream in the microwave until it becomes liquid (about 20 seconds).
  • Spread this sauce over the cheese cream of the cake with the help of a spatula. Let them run quietly down the sides.
  • Chill the cake for 10 minutes.
  • Beat the cream with the powdered sugar until stiff.
  • Use the piping bag to create small tuffs or come up with another decoration.
  • Finally, you can roughly crumble a few cookies and spread them on the cake as decoration.

Speculoos cheesecake with baked apple topping as an alternative

Popular Christmas cake recipes includeoften also baked apples. So if you would rather have a baked apple cake, you can also prepare a delicious baked apple topping instead of the topping above. This is what you need:

  • 500 g tart apples, washed, cored and cut into small cubes (organic apples can also be unpeeled)
  • 1 tbsp lemon juice
  • 30g sugar
  • 1 Zimtstange
  • Zimtpulver
  • Pulp of a vanilla bean

Mix the ingredients in a small pot and then steam them. The aim is to get bite-firm apple pieces. So they should be soft but not mushy. Let the topping cool slightly before spreading it on the cheesecake with speculoos. If you want, you can sprinkle cookie crumbs on top for decoration before serving the cheesecake for Christmas (or any other occasion).
