Ingredients:

  • 1kg pumpkin
  • 1 liter fresh milk
  • 200g sugar
  • 1 box of shortbread cookies
  • 150 g cornstarch
  • 1 tablespoon apricot jam
  • 1 tablespoon crushed walnut kernels
  • 1 packet vanilla
  • Sugar – brown, for sprinkling

Preparation method:

  • Boil the cleaned pumpkin, puree it and mix it with the boiled milk. Add 2/3 of the sugar.
  • Bring the mixture to a boil on the fire and add the starch previously diluted with cold milk or water.
  • Cook the starch until it thickens and, after cooling slightly, stir in the jam fruits, crushed walnuts, 1/3 of the cookies and vanilla.
  • Mix everything well and distribute into fireproof dessert molds, into the bottom of which the remaining cookies have previously been distributed.
  • Sprinkle generously with brown sugar and bake the pumpkin cream in a hot oven until the sugar melts.

What you need for this dessert recipe:

  • 450g mascarpone cheese
  • 230 g pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 230 g whipped cream
  • 1 package of cookies
  • Cocoa powder for garnish (optional)

Preparation of the pumpkin cream:

  • To make the pumpkin mousse, you first need to heat the egg yolks and sugar over a water bath, stirring constantly so that you don't accidentally scramble the eggs. Once cooled, mix the egg yolk mixture with the mascarpone, pumpkin puree and pumpkin pie spice.
