Donuts, Berliners, pancakes... no matter what you call them, the pastries are simply a part of New Year's Eve. We don't know exactly where the custom of eating donuts on December 31st comes from. But it probably has something to do with the fact that the sweet, fatty pastries are the perfect basis for a long, boozy night.

Berliner for New Year's Eve: Quick recipe

We admit it, healthy is of course different. Because the donuts are fried and are therefore real calorie bombs. But honestly, every single calorie is worth it because the donuts taste irresistibly good. Traditionally, the donuts are tossed in powdered sugar after baking. If you like, you can also fill the pastry with apples or raisins.

You need these ingredients:

  • 5 EL Kill
  • 250 ml water
  • 1 pinch of salt
  • 1 tbsp sugar
  • 150 g Flour
  • 3 Owner
  • optional: raisins or apples
  • 2 l oil for deep frying
  • some powdered sugar

And this is how the preparation works:

1.Put oil, water, salt and sugar in a pot, stir roughly and bring to the boil. As soon as the liquid boils, take the pot off the stove, let the whole thing cool down briefly and then slowly pour in the flour.

2.Knead well with the dough hook of a hand mixer until a dough forms. Be very careful when doing this, because the liquid is of course still quite hot. Place the pot with the dough back on the hot stove and continue working until the dough separates from the bottom of the pot like a large dumpling.

3.Place the dough in a large bowl and immediately add an egg. Knead well with the dough hook or your hands (careful, it's still hot) and then let it cool. Then add the other two eggs and knead until the dough is shiny.

4.If you like, you can add raisins or apples to the dough and incorporate them, but this is not a must.

5.Pour oil into a saucepan and let it get hot for deep frying. Be very careful when doing this, as hot oil can be very dangerous if handled incorrectly. The pot should still have enough space at the top so that the fat does not overflow. You can use a wooden skewer to check whether the optimal temperature for deep-frying has been reached. Hold it in the oil, as soon as bubbles form on it, the oil is ready for frying.

6.Then take a tablespoon-sized portion of the dough, form them into small balls and then carefully fry them in the hot fat. Remove with a slotted spoon and drain well. Then roll in some powdered sugar. So delicious!
