Have you planned everything around the menu for Christmas (or are you lucky enough to be invited and don't have to plan anything) and your thoughts are already occasionally thinking about New Year's Eve? Regardless of whether you have planned a New Year's Eve party yourself or are invited somewhere and want to bring something with you, the classic salad with herring is a wonderful idea. We have a few variations for the herring salad recipe, just as you might remember it from before: GDR housewife style!
Tipp:Any herring salad recipe benefits from having enough time to set, which is also beneficial if you have a lot to do on the day of the meal anyway. Prepare the salad one to two days in advance so that all the products can develop their flavors.
Recipe idea with yogurt, apple and onion
Creamy, delicious and with a hint of sour aroma thanks to the apple cider vinegar and lemon - this herring salad isPamper everyone on New Year's Eve! For example, you can choose herring fillets and you don't necessarily have to wash pickled fillets if you want a stronger flavor in the salad.
For 4 people:
- 4 herring fillets, washed and patted dry
- 1 onion, cut into fine strips
- 1 leek, cleaned and cut into rings
- 2 small red apples, peeled, cored and cut into cubes
- 100g Greek yogurt
- 50 g Mayonnaise
- 100 g sour cream
- 1 – 2 tbsp apple cider vinegar
- 1 splash of lemon juice
- sugar, salt, pepper
- 2 tbsp fresh dill, chopped
Mix the dairy products with the vinegar and lemon to form a smooth cream, which you then season with pepper, salt and sugar. In a bowl, mix the chopped fillets with the onion, leek and apples and then add the cream. If necessary, season more and stir in the dill.
Red herring salad recipe with apple and cucumber and beetroot
Not just the red color that the lettuce hasthrough the beetrootis interesting here, but also the sour taste that the fish salad gets from the gherkins. You can buy the beetroot pre-cooked or cook it yourself the day before and store it until the next day.
For 4 people:
- 8 herring fillets, drained and chopped
- 2 beetroot tubers, cooked until soft and chopped
- 2 onions, finely diced
- 4 pickles, chopped small
- 2 apples, diced
- 2 dashes of white wine vinegar
- 4 tbsp sour cream
- 4 tablespoons Greek yogurt (or other natural yogurt)
- Pepper, salt, fresh chopped dill
In a bowl, mix the fillets with the beetroot, cucumbers and onions. Separately, mix the cream with the yogurt and vinegar and then add the cream to the other ingredients. Now fold in the apple and season with pepper and salt. Add the dill just before serving.
Boiled potatoes taste great with this.
The variant is also a popular classicwith beef, which is an interesting combination. Otherwise, this isn't too different from other classics, so you can leave out the beef if necessary.
For 6 people:
- 10Hering fillets (z. B. Matjes)
- 200gcookedbeef
- 3 vinegarcucumbers, diced
- 2Apples with a sour taste, diced
- 1Onion, diced
- 1Beetroot, cooked the day before and peeled before preparing the salad
- 3HEMayonnaise
- 200gsour cream
- ½TLWine vinegar
- ¼TLZucker,Salt and pepper, fresh dill, chopped
Mix the mayonnaise with the cream until creamy and then season with sugar, salt, vinegar and pepper. Now fold in the herring and beef and refine the fish salad with finely chopped dill.
Herring rolls on beetroot jelly or on a bed of parsley
This variant gives you a herring salad recipe of a slightly different kind. The filletsare rolled upand topped the salad with it. Gelatine is used to thicken it. Feel free to try it out!
For 4 people:
- 3 double herring fillets
- 1 beetroot, peeled and thinly sliced
- 250 ml apple juice
- 3 tbsp apple cider vinegar
- 5 gelatin sheets
- 100 g potato cubes, boiled in salted water, strained and evaporated covered
- 1 apple, peeled and cut into pieces
- 1 small red onion, diced
- 125 ml whipped cream
- 50 g Mayonnaise
- for seasoning: pepper, salt, lemon juice
Allow the gelatin to soak in cold water. Put 125 ml of water, apple juice and vinegar in a pot and, as soon as everything comes to the boil, add the beets. As soon as the beetroot is soft, remove the pot from the heat, squeeze out the gelatine and add it to the hot water. Stir until dissolved. After everything has cooled a little but not yet solidified, divide the beets between four plates and pour in the juice from the pot. Place the plates in the refrigerator to allow the sauce to set.
Cut one of the double herring fillets into pieces and mix with the apple pieces, potato pieces and onion. Whip the cream, stir in the mayonnaise and fold in the pieces from above as well. Season with the specified products
Separate the other fillets from each other and roll them up. Divide the herring salad among the plates and garnish with the herring rolls and, if desired, lemon slices and parsley leaves.
As an alternative to the beetroot jelly, you can also make a bed of parsley on which to serve the prepared herring salad recipe.
