Ingredients
For the ice cream:
- 480 ml coconut milk
- 128 g Cashewbutter
- 40 g Cocoa powder
- 8 large Medjool dates, pitted
- optionally 50 g coconut blossom sugar
- 1 teaspoon vanilla extract
For the coating:
- 60 ml maple syrup
- 60 ml Coconut beer
- 20 g Cocoa powder
- Cocoa nibs for sprinkling
preparation
- Mix cashew butter, coconut milk, cocoa powder, dates, coconut blossom sugar and vanilla extract in a high-speed blender. Process until the mixture is creamy and smooth.
- Before freezing, pour the mixture into the ice cream molds, insert the sticks and let them set.
- In the meantime, prepare the chocolate coating: Mix the cocoa powder, maple syrup and coconut oil in a heatproof bowl over a barely simmering pot of water until well mixed and melted.
- Set the bowl aside and let it cool to room temperature.
- Line a baking tray with parchment paper and set aside when the popsicles are ready. Once removed from the molds, dip each popsicle stick into the chocolate coating before placing on the paper.
- Then sprinkle with cocoa nibs or whatever you like and put back in the freezer until the ice cream is hard.
A simple trick for a consistent result:Pour the ganache into a tall, narrow coffee cup. This makes it easier and cleaner to dip the popsicle stick so that it is evenly coated with chocolate all over.
