Apple strudel with puff pastry: Simple recipe with or without nut filling

Which apple varieties are best?

When making apple strudel, it is important to use apples that hold their shape when baked and provide a balance of sweetness and acidity. The best varieties for this recipe are Granny Smith, Gala, Jonagold, Golden Delicious and Pink Lady.

With or without nuts?

If you don't have a lot of time and want to prepare the strudel in a flash, then you can only use apples for the filling. However, I recommend that you also prepare an extra nut filling with walnuts. It adds additional flavors and texture to the dessert, making it extra special.

And now for the recipe:

Apple strudel with puff pastry: the ingredients

  • 1 pack of puff pastry, thawed
  • 1-2 Äpfel, zB Granny Smith
  • 2 tablespoons white sugar
  • 1 tablespoon flour
  • 1/2 teaspoon cinnamon
  • 1 beaten egg with 1 teaspoon water for brushing

For the nut filling (optional):

  • 30 g walnuts, chopped
  • 1 1/2 tablespoons light brown sugar
  • 1 tablespoon breadcrumbs

For the frosting (optional):

  • 50g melted butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 pinch of salt
  • 125g powdered sugar

Preparation step-by-step

Step 1: Prepare and season apples

Peel and core the apples. Cut them into cubes. For an apple strudel you need about one and a half cups of diced apples.

Place the apple pieces in a bowl and sprinkle with 1 tablespoon white sugar, flour and cinnamon. Stir well and let the apples rest for about 15 minutes so they can release their juice.

Step 2 (optional): Prepare nut filling

For a simple nut filling, chop the walnuts and toss them in a small bowl with the brown sugar and breadcrumbs. Stir and set aside.

Step 3: Assemble the strudel

First, flour the work surface and roll out the thawed puff pastry with a rolling pin. Place it on a sheet of baking paper.

Place the nut mixture in the center of the dough, leaving 1 inch (2.5 cm) between the top and bottom edges. Place the seasoned apple pieces on top.

Now you can simply fold the puff pastry or braid it as desired.

To fold:

Fold one side of the dough over the filling. Lift the opposite side and place it over the first. Press the sides with your fingers to prevent the strudel from opening while baking.

Whisk an egg with a teaspoon of water and brush on the strudel.

Use a sharp knife to make slits to allow steam from the mixture to escape as it bakes.

For braiding:

Cut several slanted strips on both sides of the dough. Fold the top edge over the filling and begin braiding the strips over the filling, overlapping.

Brush the top with the beaten egg and water.

Step 4: Bake the apple strudel with puff pastry

Carefully place the strudel on a baking tray with the baking paper. Sprinkle with a little granulated sugar if desired.

Bake in a preheated oven at 180°C for about 40-45 minutes until golden brown.

Place the finished apple strudel on a wire rack to cool. Dust with powdered sugar.

Step 5 (optional): Prepare icing and drizzle over the strudel

If desired, you can make the apple strudel with puff pastry with onesimple castingrefine. Mix the glaze ingredients in a bowl and whisk well until the glaze has a smooth consistency. If it is too runny, add a little more powdered sugar.
